Ingredients

  • 1 (10 oz) bagcauliflower florets
  • 2 clovesgarlic
  • 15 mlmiso paste, red
  • ¾ lbstriploin (New York strip) steak
  • 1 (8 oz) pkgsugar snap peas

Directions

  1. Preheat the oven to 450°F. Line a baking sheet with aluminum foil if you like for easier cleanup.
  2. In a medium bowl, whisk together miso, rice vinegar, neutral oil, sesame seeds, and soy sauce until smooth.
  3. Toss the cauliflower florets in the bowl with the sauce until evenly coated. Spread the cauliflower on the lined baking sheet in a single layer and drizzle with any remaining sauce.
  4. Roast in the oven, stirring once about halfway through, until the cauliflower is tender and caramelized, about 15–20 minutes. Remove from oven when done.
  5. Peel and finely mince the garlic and add it to the bowl you used for the sauce.
  6. Pat the steak dry and slice it crosswise into 1/4-inch-thick strips. Add the steak to the bowl with the garlic and season with salt and pepper, then toss to coat.
  7. Preheat a nonstick skillet over medium-high heat.
  8. Wash and dry the snap peas while the skillet heats up.
  9. When the skillet is hot, add a small amount of oil and swirl to coat the bottom. Add the garlic, steak strips, and snap peas; stir-fry until the peas are tender and the steak is just cooked through, 4–5 minutes. Cover and remove from heat.
  10. To serve, divide the stir-fry and roasted cauliflower between plates.

Two tips

  • Prep the garlic and miso mixture ahead of time and refrigerate until ready to use.
  • If you have leftovers, toss a spoonful of soy sauce over the cauliflower and sprinkle with sesame seeds before reheating.
