Ingredients

  • ½English cucumber
  • 1 clovegarlic
  • 1lime
  • ½ medium headnapa cabbage
  • ⅛ cuppeanuts, roasted unsalted
  • ¾ lbstriploin (New York strip) steak

From the pantry: crushed red pepper, rice vinegar, salt, soy sauce, toasted sesame oil, virgin coconut oil

Directions

  1. Pat the steak dry and season lightly, then marinate briefly by combining half of the lime juice with a splash of soy sauce; let it sit for 10 minutes.
  2. Meanwhile, juice the lime and set aside a portion for the dressing; mince the garlic.
  3. Wash and dry the cabbage, remove the tough core, and slice it thinly; cut the cucumber ends, halve lengthwise, and slice on the diagonal.
  4. Whisk the reserved lime juice with minced garlic, toasted sesame oil, rice vinegar, a pinch of crushed red pepper, and salt to make the dressing.
  5. Heat coconut oil in a grill pan, skillet, or grill over medium-high heat and sear the steak until cooked to your liking, about 2 to 5 minutes per side; rest briefly.
  6. Toss the cabbage and cucumber with the dressing, then scatter the peanuts over the top and arrange the sliced steak on the plate before serving.

Two tips

  • Marinate the steak while you prep the vegetables to save time.
  • Offer lime wedges on the side for extra brightness or a touch more heat with additional crushed red pepper.
