Ingredients

  • ½ (18 oz) bagbroccoli florets
  • ½ small bunchgreen onions (scallions)
  • ½ cupjasmine rice
  • 1red bell pepper
  • ¾ lbstriploin (New York strip) steak
  • red bell peppers

From the pantry: black pepper, salt, sesame seeds, stir-fry sauce, toasted sesame oil

Cookware

baking sheet pan · chef's knife · colander · cutting board · measuring cups · measuring spoons · oven mitts · small saucepan · stirring spoon

Directions

  1. Rinse the jasmine rice in cold water using a colander, drain, and transfer to a small saucepan. Add water and bring to a boil over high heat.
  2. When the liquid boils, stir once, cover, and reduce the heat to low. Simmer until the rice absorbs the liquid, about 15–18 minutes. Keep it covered and off heat for 5 minutes after it finishes.
  3. Rinse and dry the green onions. Trim and cut the white and pale green parts into 1-inch pieces, and place them on a baking sheet. Slice the dark green tops thinly and reserve for serving.
  4. Wash and seed the bell peppers, halve them crosswise, and cut into thin strips. Add the pepper strips and broccoli florets to the baking sheet with the onions.
  5. Pat the striploin steak dry and cut into 1-inch pieces. Scatter the steak pieces onto the baking sheet.
  6. Drizzle the vegetables and steak with the stir-fry sauce and a light drizzle of sesame oil, then season with salt and pepper. Toss to coat and spread in an even layer.
  7. Roast in the oven until the vegetables are tender and the steak is cooked through, about 15 minutes, stirring halfway through.
  8. To serve, divide the rice among plates, top with steak and vegetables and spoon any remaining sauce over. Finish with the reserved green onions and sesame seeds.

Two tips

  • Prep ahead: rinse and measure the rice while you prep the vegetables for a smoother cook.
  • Leftovers can be reheated gently and brightened with a splash of stir-fry sauce if needed.
