Ingredients

  • 12 fl ozchicken or vegetable broth
  • 1 clovegarlic
  • ½ (4 oz) loggoat cheese
  • ¾ cupgreen lentils, dried
  • ½ small bunchItalian (flat-leaf) parsley
  • 1shallot

Directions

  1. Rinse the lentils and transfer them to a small saucepan. Cover with the broth and bring to a boil, then simmer until just tender, about 15–20 minutes.
  2. Wash the carrots and celery. Peel and dice the carrots; dice the celery.
  3. Place a skillet over medium heat.
  4. Peel and thinly slice the shallot and separate the slices into rings.
  5. Coat the bottom of the skillet with oil, add the shallot, and cook until it starts to soften, about 2–3 minutes.
  6. Wash and dry the parsley. Remove the leaves from the stems and finely mince them.
  7. Add the carrots and celery to the skillet and season with salt and pepper. Cook, stirring occasionally, until the vegetables are tender, about 5 more minutes.
  8. Peel and mince the garlic; in a large bowl, whisk together garlic, olive oil, red wine vinegar, Dijon, thyme, salt, and pepper to make the vinaigrette.
  9. Drain the lentils and add them to the bowl with the vegetables and parsley. Toss to coat.
  10. Crumble the goat cheese over the warm salad and serve.
