  • ½ cupbasmati rice
  • 2 mediumcarrots
  • 2 stickscelery
  • 12 fl ozchicken or vegetable broth
  • 2 clovesgarlic
  • 1green bell pepper
  • ¾ lblean ground beef
  • 1 mediumyellow onion
  • green bell peppers
  • yellow onions

Directions

  1. Rinse the basmati rice under cold running water using a colander, then drain and transfer to a small saucepan. Add the broth and bring to a boil over high heat.
  2. While the rice heats, wash and dry all fresh produce and keep them handy for chopping.
  3. When the liquid boils, stir the rice, cover the pan, and reduce the heat to low. Let it cook until the broth is absorbed, about 15 to 18 minutes, then keep it off the heat covered for 5 minutes.
  4. Peel and finely dice the onion and mince the garlic; place them in a medium bowl.
  5. Trim the celery, then dice it small and add to the bowl with the onion and garlic.
  6. Remove seeds and dice the bell peppers; add them to the bowl.
  7. Peel and dice the carrots into small pieces and add them to the bowl as well.
  8. Heat a nonstick skillet over medium and drizzle in a little oil to coat the bottom. Add the vegetables and cook, stirring often, until they begin to soften, about 5 to 6 minutes.
  9. Add the ground beef and the spices to the skillet. Break the meat apart with a spoon and cook until browned and crumbly, about 4 to 5 minutes more.

Two tips

  • Leftovers keep in the fridge for up to 3 days; reheat gently before serving.
  • If you want a bit more heat, sprinkle in a pinch of cayenne pepper or increase the paprika and oregano to taste.
