  • ¾ lbraw peeled shrimp, fresh or frozen

Directions

  1. If using frozen shrimp, place them in a medium bowl and cover with water to thaw; if you have fresh shrimp, skip this step.
  2. Wash and dry all produce, halve the grape tomatoes, halve and pit the avocados, then scoop out the flesh in slices while it’s still in the skins. Mince the garlic.
  3. Place a skillet over medium-high heat to warm.
  4. Rinse the shrimp in a colander and pat them dry with a clean towel.
  5. Add oil to the skillet and swirl to coat. Sizzle the minced garlic briefly, about 15–30 seconds, then add the shrimp and cook until they turn opaque, about 1–2 minutes per side.
  6. In a small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper to make the dressing.
  7. To serve, layer a bed of spinach on a plate, then top with the tomatoes, avocado slices, and shrimp. Drizzle with the dressing and enjoy.

  • Prep ahead: wash and dry the spinach and tomatoes in advance for quicker assembly.
  • Swap ideas: use olive oil and lemon juice for a lighter dressing if you don’t have honey.
