  • 24 fl ozchicken or vegetable broth
  • ⅔ cupfrozen corn
  • ½lime
  • 1red bell pepper
  • 8 fl ozwhole milk
  • 1 (7.5 oz) canwild pink salmon, traditional style
  • ½ mediumyellow onion
  • 2 mediumyellow potatoes
  • red bell peppers
  • avocados
  • yellow onions

Directions

  1. Wash and dry all fresh produce.
  2. Peel and dice the potatoes, placing them in a small bowl.
  3. Trim, seed, and dice the bell peppers; add them to the bowl with the potatoes.
  4. Heat a medium saucepan over medium-high heat and swirl in the oil.
  5. Peel, halve, and dice the onion.
  6. Add the potatoes, peppers, and onion to the pan; cook, stirring occasionally, until they start to soften, about 3–4 minutes.
  7. Sprinkle flour, chili powder, black pepper, and salt over the vegetables; cook, stirring constantly, until fragrant, about 1 minute.
  8. Pour in the broth and milk; bring to a simmer, then reduce heat to medium and cook until the potatoes are tender, 10–12 minutes.
  9. Cut the lime into wedges and set aside for serving.
  10. Halve and pit the avocado; scoop out the flesh in chunks and set aside.
  11. When the soup is tender, break the salmon into chunks and add along with the corn; cook until heated through, about 3–4 minutes.
  12. Divide the soup into bowls, top with avocado, and squeeze lime over each serving.

Two tips

  • Prep ahead by chopping the onion, potatoes, and peppers in advance and storing them in water to prevent browning.
  • For a lighter finish, serve with a squeeze of lime and a pinch of cilantro from the pantry.
