Directions

  1. Preheat the oven to 425°F.
  2. Rinse and dry the produce, then prep the potatoes by cutting them into bite-sized pieces and set them on one half of a baking sheet.
  3. Trim the ends of the green beans, place them on the other half of the sheet, drizzle with oil, season, and toss to coat, keeping the veggies on their own side in an even layer.
  4. Roast the vegetables in the oven, tossing halfway through, until they are golden and tender, about 15–20 minutes; remove and let cool slightly.
  5. Pat the salmon dry and lay it on a separate baking sheet, skin side down. Drizzle with oil and season well.
  6. Roast the salmon in the oven until it is opaque and flakes easily, about 8–10 minutes; remove and let rest briefly.
  7. Halve the grape tomatoes and arrange them on a plate with the shallots sliced into thin rings.
  8. Peel the shallots and thinly slice them; add to the plate with the tomatoes.
  9. Cut the eggs in half lengthwise and arrange them on the plate as well.
  10. Tumble the lettuce leaves into portions on each plate, then top with potatoes, green beans, salmon, tomatoes, shallots, eggs, olives, and capers; serve with the vinaigrette on the side.
