- ½ (6 oz) pkgblueberries

Directions
- 1. Rinse the quinoa and combine it with water in a small saucepan; bring to a boil, then reduce to a simmer, cover, and cook about 15 minutes. Remove from heat and let it stand, still covered, for 5 minutes.
- 2. In a separate small bowl, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper until emulsified.
- 3. Rinse and dry the spinach and blueberries; peel the orange and cut the segments into wedges.
- 4. On each plate, divide the cooked quinoa and spinach.
- 5. Top with orange wedges.
- 6. Scatter the blueberries and sliced almonds over the greens.
- 7. Drizzle the dressing over the salad and season lightly if desired.
- 8. Serve right away and enjoy.
