Directions

  1. Roast the chickpeas: drain and rinse, pat dry, then spread on a sheet pan. Toss with oil and a pinch of cumin, salt, and pepper, and spread into an even layer.
  2. Roast until crisp and browned around the edges, about 15 to 20 minutes. Stir once halfway through to promote even cooking.
  3. Make the dressing: finely mince the garlic, then whisk it with lemon juice, oil, Dijon, salt, and pepper in a small bowl until smooth.
  4. Prepare the produce: rinse the arugula and pat dry. Wash the cucumber and cut into medium dice. Halve, pit, and dice the avocado flesh.
  5. Shave or grate the Parmesan to yield 1/8 cup.
  6. Assemble the salad: lay a bed of arugula on plates, top with roasted chickpeas, cucumber, and avocado.
  7. Finish with a drizzle of the dressing and the Parmesan shavings, then season with additional pepper to taste and serve.

Two tips

  • Prep ahead: roast the chickpeas and chop the veg the night before for quick assembly. Store separately in airtight containers.
  • Substitute: swap cucumber for an equal amount of sliced zucchini, if desired, and use any remaining Parmesan as a topping.
