Directions
- Rinse the green beans and pat dry, then trim the ends and cut them in half; set aside in a bowl.
- Juice the lemons into a large bowl and set aside.
- Peel and mince or press the garlic; add it to the lemon juice and whisk to combine.
- In the same lemon-garlic mixture, whisk in the yogurt, olive oil, salt, and pepper until smooth.
- Heat a skillet over medium-high heat. Pat the salmon dry and season both sides with salt and pepper.
- Add a thin film of coconut oil to the skillet and lay the salmon in skin-side down; cook until the flesh is opaque and flakes easily, 3–4 minutes per side depending on thickness; transfer to a plate when done.
- Toss the green beans with the yogurt dressing in the bowl until well coated, then plate with the salmon for serving.

- For a different texture, swap green beans for asparagus and serve with the same lemon-yogurt dressing.
