Ingredients
- 1 small bunchasparagus
- 4 slicesbacon
- ¾ lbsalmon fillet
From the pantry: black pepper, Dijon mustard, extra virgin olive oil, pure maple syrup, salt
Cookware
aluminum foil · baking sheet pan · chef's knife · colander · cutting board · measuring spoons · mixing bowls · oven mitts · spatula · whisk or fork
Directions
- Preheat the oven to 400°F and line a baking sheet with aluminum foil.
- Rinse and dry the asparagus, snap off the woody ends, and spread them on one half of the sheet. Drizzle with oil and season with salt and pepper.
- Whisk together maple syrup and Dijon in a small bowl and set the mixture aside.
- If the salmon has skin, remove it by sliding a knife between the flesh and skin, discarding the skin, and keeping the fillet ready to portion.
- Cut the salmon into portions. Brush half of the syrup mixture over the salmon, wrap each piece with a bacon strip, then brush the remaining glaze on the bacon, placing seam-side down on the sheet beside the asparagus.
- Bake on the sheet until the salmon is cooked through and the asparagus is tender, about 10–12 minutes.
- Heat the oven to broil on high and move the rack to the upper third. Broil the salmon and bacon for 2–3 minutes to crisp the bacon.
- Remove from the oven and transfer the salmon and asparagus to plates for serving.
Two tips
- Prep the asparagus and bacon-wrapped salmon earlier and refrigerate until ready to bake.
- If you want a touch more glaze, drizzle a little maple syrup over the bacon just before broiling, using only the listed ingredients.
