Maple Dijon Bacon-Wrapped Salmon with Roasted Asparagus

  • 1 small bunchasparagus
  • 4 slicesbacon
  • ¾ lbsalmon fillet

Directions

  1. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  2. Rinse and dry the asparagus, snap off the woody ends, and spread them on one half of the sheet. Drizzle with oil and season with salt and pepper.
  3. Whisk together maple syrup and Dijon in a small bowl and set the mixture aside.
  4. If the salmon has skin, remove it by sliding a knife between the flesh and skin, discarding the skin, and keeping the fillet ready to portion.
  5. Cut the salmon into portions. Brush half of the syrup mixture over the salmon, wrap each piece with a bacon strip, then brush the remaining glaze on the bacon, placing seam-side down on the sheet beside the asparagus.
  6. Bake on the sheet until the salmon is cooked through and the asparagus is tender, about 10–12 minutes.
  7. Heat the oven to broil on high and move the rack to the upper third. Broil the salmon and bacon for 2–3 minutes to crisp the bacon.
  8. Remove from the oven and transfer the salmon and asparagus to plates for serving.

Two tips

  • Prep the asparagus and bacon-wrapped salmon earlier and refrigerate until ready to bake.
  • If you want a touch more glaze, drizzle a little maple syrup over the bacon just before broiling, using only the listed ingredients.
