  • ½ (24 oz) jarmarinara sauce
  • 1 (18 oz) tubepolenta, pre-cooked
  • ¾ lbsalmon fillet
  • ½ cupshredded cheese, Italian blend
  • lemons

Directions

  1. Preheat the oven to 425°F.
  2. Slice the polenta into ½-inch rounds and arrange them in the bottom of a baking dish, overlapping slightly; pour marinara over the polenta and sprinkle with the Italian cheese.
  3. Bake the polenta until it’s warmed through and the cheese is bubbling, about 20 minutes.
  4. While the polenta bakes, rinse and trim the asparagus and place it on one half of a baking sheet.
  5. Pat the salmon dry and lay it skin-side down on the other half of the baking sheet.
  6. Zest and juice the lemon over the asparagus and salmon, drizzle with olive oil, and season with Italian seasoning, salt, and pepper; spread the asparagus in an even layer.
  7. Roast until the asparagus is tender and the salmon is cooked through, about 12–15 minutes.
  8. Plate by dividing the salmon, asparagus, and polenta bake between plates and serving promptly.
