Ingredients

  • ½ (4 oz) pkgcrumbled feta cheese
  • ½ cuphummus
  • ½ small bunchItalian (flat-leaf) parsley
  • ¾ lbsalmon fillet
  • 1tomato
  • 2yellow bell peppers
  • tomatoes

Directions

  1. Preheat the oven to 425°F and position the rack in the upper third of the oven.
  2. Wash and dry all fresh produce.
  3. Pat the salmon dry with paper towels. Place it on one half of a baking sheet, drizzle with oil, and season with salt and Italian seasoning.
  4. Trim, seed, and halve the bell peppers lengthwise; set them on the other half of the baking sheet. Drizzle with oil, season with salt and pepper, then place cut-side down.
  5. Bake until the peppers are fork-tender and the salmon is cooked through, about 10–12 minutes.
  6. Dice the tomato and place it in a small bowl.
  7. Remove the parsley leaves from the stems, mince them, and add to the tomato with the feta. Stir to combine and set aside.
  8. When the salmon is done, transfer it to a plate and loosely cover with foil; keep warm.
  9. Turn the oven to broil on high.
  10. Spread hummus in the pepper halves and top with the tomato-feta mixture. Broil for 2–3 minutes until the cheese softens and starts to brown, then remove from the oven.
  11. Divide the stuffed peppers and salmon between plates and serve.

Two tips

  • Prep the tomato and parsley earlier in the day and keep them refrigerated until use.
  • Leftovers can be stored separately in the fridge; reheat the salmon gently and keep peppers intact for a quick next day lunch.
