  • 1 (7.5 oz) canwild pink salmon, traditional style

Directions

  1. Rinse and dry all produce, then prep the greens and aromatics in a bowl.
  2. Zest the lime and squeeze out the juice into the same bowl.
  3. Grate the ginger and mince the garlic, adding both to the lime mixture.
  4. Seed and finely dice the jalapeño, then fold it into the bowl with the lime and aromatics.
  5. Remove cilantro leaves from the stems, chop the leaves, and add to the bowl.
  6. Trim the green onions, slice them into 1/4-inch pieces, and add half to the bowl; reserve the rest for garnish.
  7. Drain the salmon and combine it with the egg, mayonnaise, bread crumbs, and a pinch of salt in the bowl; mash together until blended.
  8. Heat a large nonstick skillet over medium-high heat.
  9. Form the salmon mixture into patties using a 1/4-cup scoop and flatten to about 1/2 inch thick; cook on the skillet until browned and warmed through, about 3 minutes per side, then transfer to a plate.
  10. Halve and pit the avocado, then scoop the flesh out after scoring it in the skin and slicing it crosswise; set aside.

Two tips

  • Make-ahead: chill the salmon mixture briefly so patties hold their shape better when frying.
  • Spread the leftovers on lettuce with extra avocado slices for another quick wrap tomorrow; a squeeze of lime brightens it up.
