Ingredients

  • ½ (5 oz) pkgbaby spinach
  • 2 slicesbacon
  • ½ lbchicken breasts, boneless skinless
  • 2 clovesgarlic

  • 2whole grain buns or rolls

Directions

  1. Heat a skillet over medium heat.
  2. Slice the chicken horizontally to form thin fillets and season with salt and pepper.
  3. Coat the skillet bottom with oil, then add the chicken and bacon; cook until chicken is cooked through and bacon is crisp, about 3–4 minutes per side. Transfer to a plate lined with paper towels and pat the bacon dry.
  4. Toast the buns or rolls until lightly browned.
  5. Wash and dry the spinach, slice the tomato into rounds, and halve and pit the avocado; scoop the avocado slices from their skins.
  6. Mince the garlic. In a small bowl, mix mayo with half of the garlic; reserve the rest for the salad dressing.
  7. Whisk together the remaining garlic, lemon juice, olive oil, salt, and pepper to make the dressing.
  8. Thinly slice the chicken into strips.
  9. Spread the garlic mayo over the bottom halves of the bread, then layer with spinach, chicken, avocado, tomato, and bacon. Top with the remaining bread.
  10. Plate the sandwiches and serve with the extra spinach on the side; drizzle with the dressing and enjoy.

  • Make ahead: prep the garlic mayo and dressing up to a day in advance and refrigerate.
  • Serving idea: swap in extra tomato slices and extra avocado to vary textures.
