Directions
- Preheat the oven to 450°F and set a baking dish ready.
- Wash the cilantro and peppers, trim seeds, and small-dice the peppers; place them in the baking dish.
- Drain and rinse the chickpeas; add them to the dish with marinara and the spices, then stir to combine.
- Put the baking dish in the oven and bake, stirring halfway, until the peppers and chickpeas are tender, about 15–20 minutes.
- Meanwhile, heat a skillet over medium-high heat, pat the salmon dry, and season the top side with Cajun seasoning and a pinch of salt.
- Once the skillet is hot, add oil and swirl to coat the bottom; place the salmon skin-side down and cook 3–4 minutes per side until the flesh is opaque and the skin is crisp.
- Transfer the salmon to a plate, loosely cover with foil, and let rest.
- Shave cilantro from the stems and mince the leaves.
- When the peppers and chickpeas finish, remove the dish from the oven and stir in the cilantro until just combined.
- To serve, divide the saucy chickpeas and salmon between plates and enjoy.
