Directions
- Whisk together juice from half a lemon, olive oil, balsamic vinegar, maple syrup, salt, and pepper in a large salad bowl to form the dressing.
- Trim the tough ends from the Brussels sprouts, then shred them thinly and add to the bowl with the dressing.
- Rinse the grapes and apple; halve the grapes and core and dice the apple, then add both to the salad bowl.
- Chop the walnuts roughly and sprinkle them over the salad; grate about ¼ cup Parmesan and add it too.
- Toss everything together until the components are evenly coated and distributed.
- Transfer the salad to a plate or bowls and serve.
Two tips
- Prep the Brussels sprouts and dressing ahead on separate containers; refrigerate and combine just before serving.
- If you have extra Parmesan, sprinkle it on top at serving or try using a few extra grapes for a sweeter note.
