- ½ (5 oz) pkgbaby spinach
- 2 mediumbeets
- ½ (4 oz) loggoat cheese
- 2oranges
- ¼ cupwalnuts

Directions
- Heat the oven to 500°F.
- Scrub and trim the beets, then peel and slice them into thin half-rounds. Spread on a sheet pan, drizzle with oil, and season with salt and pepper.
- Roast the beets in the oven until tender, about 20 minutes.
- Wash the spinach and oranges; peel the oranges and cut them into half-circle slices.
- In a small bowl, whisk together the oil, vinegar, Dijon, salt, and pepper to make the dressing.
- Crumble the goat cheese into a small bowl and roughly chop the walnuts.
- To serve, lay a bed of spinach on each plate, arrange the beet and orange slices on top, then sprinkle with goat cheese and walnuts and drizzle with the dressing.
