  • ½ (4 oz) loggoat cheese
  • ½lemon

Directions

  1. Rinse the asparagus, snap off the woody ends, and cut into 2-inch diagonal pieces.
  2. Mince the garlic and whisk it with lemon juice, olive oil, balsamic vinegar, honey, salt, and pepper to form the dressing.
  3. Heat a skillet over medium and lightly oil the bottom.
  4. Add the asparagus and cook, stirring occasionally, until tender and vibrant green, about 5–6 minutes; remove from heat.
  5. Rinse and dry the arugula; trim strawberry stems and slice the berries.
  6. In a large bowl, combine the arugula, strawberries, and cooked asparagus.
  7. Crumble the goat cheese over the salad and sprinkle with almonds; drizzle the dressing over the top and toss gently to combine.
  8. Plate portions and serve immediately.

Two tips

  • Dress the greens just before serving or whisk the dressing and refrigerate it up to a day ahead.
  • Use extra almonds for added crunch or spoon a bit more dressing on a serving of bread if desired.
