Directions
- Wash and dry the produce. Prepare cilantro and green onions by removing stems, mincing the leaves, and placing them in a medium bowl.
- Peel and mince the garlic; mix it into the bowl with the herbs along with the ground turkey and spices until everything is well combined.
- Using a ⅓-cup measure, form the turkey mixture into ½-inch-thick patties. Place them on a plate.
- Heat a grill pan or skillet over medium-high and lightly oil it.
- Rinse the corn and beans in a colander; drain well and set aside to finish draining.
- Cook the turkey patties in the hot pan, flipping once, until browned and cooked through, about 8–10 minutes; remove to a clean plate.
- Cut the tortillas into small strips, spread on a baking sheet, drizzle with a bit of oil, and season with chili powder and salt. Bake until crisp and golden, about 10–12 minutes, flipping once during cooking.
- Grate the Parmesan and mince additional garlic; combine them in a medium bowl.
- Juice lime into the Parmesan mixture and whisk in yogurt, olive oil, Worcestershire sauce, Dijon mustard, salt, and pepper to form the dressing.
- Halve the grape tomatoes and add them to the dressing bowl to coat lightly.
- Chop or tear the romaine into bite-sized pieces, then add the corn and beans. Toss together with the dressing to make the salad.
- To serve, divide the salad on plates and top each with turkey patties and tortilla chips.
