Ingredients

  • 1 mediumyellow potato

Directions

  1. Heat a stainless skillet over medium-high heat and warm the pan.
  2. Peel and dice the yellow onion; peel and mince the garlic.
  3. Coat the bottom of the pan with virgin coconut oil, then crumble in the ground turkey and cook, stirring, until browned and crumbly, about 2–3 minutes.
  4. Add the onion and garlic and cook, stirring often, until softened, about 3–4 minutes.
  5. Prepare the potatoes by washing, peeling, and cutting into large dice; prepare the tomato by washing and dicing; rinse the cilantro, reserving half for garnish and finely chopping the rest; measure out the peas.
  6. Add the potatoes, tomato, half the cilantro, frozen peas, tomato sauce, oregano, cumin, and salt to the pan; stir well. Lower the heat to medium-low, cover, and simmer until the potatoes are tender, about 15–20 minutes.
  7. Toast the slices of bread until lightly crisped.
  8. To serve, ladle into bowls and garnish with the remaining cilantro.

Two tips

  • Chop the onion, garlic, and cilantro in advance to speed up dinner prep.
  • Leftovers keep for a couple of days in the fridge; reheat gently and serve with the crusty bread on the side.
