Directions
- Rinse and dry all fresh produce.
- Mince the garlic and capers, then whisk them into the plain Greek yogurt with ketchup, mayonnaise, red wine vinegar, salt, and pepper to form the dressing; set aside.
- Halve the grape tomatoes and arrange them on your serving plates.
- Trim the green onions and cut them into 1/4-inch pieces; scatter them over the tomatoes.
- Halve and pit the avocado, scoop the flesh from the skin, and add it to the plates.
- Coarsely grate the cheddar and sprinkle it over the tomatoes and avocado on the plates.
- Preheat a nonstick skillet over medium-high heat.
- Mince an additional garlic clove.
- Add the oil to the hot skillet, then crumble in the ground turkey with the minced garlic and spices; cook until browned and crumbly, about 4–5 minutes. Remove from heat.
- Chop or tear the romaine lettuce into bite-sized pieces.
- Build the salad by placing romaine on plates, then topping with the tomato, avocado, cheese, and turkey crumble; finish with green onions and serve with the dressing on the side.
