Ingredients

  • 1 headbutter (Boston) lettuce
  • ½ lbcremini mushrooms
  • ½ (4 oz) pkgcrumbled blue cheese
  • 1egg
  • ¾ lbground turkey
  • ½ mediumred onion
  • eggs

From the pantry: black pepper, brown sugar, cayenne pepper, Dijon mustard, extra virgin olive oil, ketchup, mayonnaise, salt, white wine vinegar, Worcestershire sauce

Directions

  1. Make a quick pickling liquor by whisking together vinegar, sugar, and salt in a small bowl.
  2. Thinly slice the onion across the grain and toss it into the pickling liquid; set aside to soften.
  3. In a bowl, mix ground turkey with the egg, Worcestershire, salt, and pepper, then shape into two even patties and rest on a plate.
  4. Rinse and thinly slice the cremini mushrooms.
  5. Heat a skillet over medium-high heat and add a little oil to coat the bottom.
  6. Add the mushrooms with a pinch of salt and pepper; cook, stirring occasionally, until soft and browned, about 8–10 minutes.
  7. In a small bowl, combine mayo, ketchup, Dijon, and cayenne; whisk until smooth and set aside for the special sauce.
  8. When mushrooms finish, add a splash of vinegar and cook briefly until the liquid evaporates; transfer to a plate and loosely cover with foil.
  9. Wipe the skillet clean, reheat over medium-high, then add a bit more oil and cook the patties undisturbed until browned on the first side, about 5 minutes; flip and cook through about 5–6 minutes more. Transfer to the plate with the mushrooms and cover.
  10. In a clean bowl, whisk together oil, vinegar, salt, and pepper to make a light dressing for the lettuce.
  11. Separate the butter lettuce, keeping two leaves per wrap, and tear or chop the rest into bite-sized pieces; toss with the dressing.
  12. To assemble, layer two butter lettuce leaves per plate, spread with the special sauce, add a burger, top with mushrooms, sprinkle blue cheese, and finish with pickled onions; serve with a side salad.

Two tips

  • Make the pickled onions a day ahead for easier assembly.
  • Leftovers keep in the fridge for 1–2 days; rewarm the burgers and mushrooms and serve with fresh lettuce if desired.
