Cookware

chef's knife · cutting board · garlic press (optional) · ladle · measuring cups · measuring spoons · medium saucepan · stirring spoon

Directions

  1. 1. Heat a medium saucepan over a steady medium heat.
  2. 2. Dice the bacon into small pieces and add to the pan; cook until the fat renders and the bacon begins to brown, about 3 minutes.
  3. 3. While the bacon cooks, dice the yellow onion and mince the garlic.
  4. 4. Add the onion, garlic, ground chicken, and spices to the pan; break the meat up with a spoon and cook until browned and crumbly, about 4–5 minutes.
  5. 5. Pour in the broth and marinara sauce, then stir in the cabbage and carrots; bring the mixture to a simmer.
  6. 6. Reduce the heat to medium and simmer until the vegetables are tender, about 6–8 minutes; remove from heat.
  7. 7. Spoon the stew into bowls and serve warm on its own or with a side if desired.

Two tips

  • Prep ahead by dicing the onion, mincing the garlic, and chopping the bacon; store in the fridge until ready to cook.
  • Serving idea: pair the stew with crusty bread or a side of rice for a heartier meal.
