Ingredients

  • 1 headbutter (Boston) lettuce
  • ¼ (8 oz) blockcheddar cheese
  • 1 clovegarlic
  • ½ pintgrape tomatoes
  • ½ small bunchgreen onions (scallions)
  • ¾ lblean ground beef
  • ½ mediumyellow onion
  • yellow onions

Directions

  1. Rinse and dry the lettuce, then separate the leaves and keep them ready for wrapping.
  2. Trim the green onions and slice them into 1/4-inch pieces; place in a small bowl with the grape tomatoes quartered.
  3. Coat a skillet with a small amount of coconut oil and heat it over medium-high until shimmering.
  4. Small-dice the onion and add it to the skillet; cook, stirring often, until softened, about 3 to 4 minutes.
  5. Mince or press the garlic; stir it into the onions along with chili powder, cumin, salt, and pepper until fragrant, about 15 to 30 seconds.
  6. Add the ground beef to the skillet; break it up as it cooks, cooking until browned and crumbly, about 4 to 5 minutes.
  7. Coarsely grate half a cup of cheddar and set aside.
  8. To serve, layer beef, tomatoes, green onions, and cheddar onto doubled lettuce leaves and roll, or mix everything together for a salad.
  9. Store leftovers by keeping the lettuce, beef, and toppings separate until ready to eat.
