Directions

  1. Preheat the oven to broil on high and place the rack in the middle. Line a baking sheet with aluminum foil if you like.
  2. Wash, dry, and peel the sweet potato. Trim the ends, then cut the potato lengthwise into 1/2-inch slices. Keep the slices on the sheet.
  3. Rub oil on both sides of each slice and sprinkle lightly with salt.
  4. Place the sheet in the oven and broil, turning the slices halfway, until they are tender, about 8–10 minutes. Watch closely to prevent burning. Remove and let cool about 3 minutes.
  5. Roughly chop the walnuts and dried cranberries.
  6. To serve, arrange the cooled sweet potato slices on plates. Top with a layer of yogurt, then scatter with walnuts and cranberries, finishing with a pinch of cinnamon.

Two tips

  • Make ahead: chop the walnuts and cranberries and refrigerate for faster assembly.
  • Swap idea: if desired, use almonds or pecans in place of walnuts and enjoy the same topping idea with the yogurt and cranberries.
