Directions

  1. Preheat the oven to 450°F and coat a baking sheet with a thin layer of oil.
  2. Wash and dry the produce, then peel the sweet potatoes and slice them into ¼-inch rounds. Arrange on the sheet in a single layer and season lightly with salt and pepper.
  3. Roast the potatoes on the sheet until they begin to soften, about 10 minutes.
  4. In a medium bowl, mix the orange juice with nutritional yeast, oil, Dijon, and spices until smooth to form the dressing.
  5. Core and thinly slice the apples; slice the cheese into thin strips or rounds.
  6. Layer half of the potato slices on the sheet, top with half of the apple and half of the cheese, then repeat with the remaining potato, apple, and cheese, finishing with cheese on top.
  7. Return the sheet to the oven and bake until the potatoes are fork-tender and the cheese is melted, about 10–15 minutes. Toss kale with the dressing, then add walnuts and cranberries to make the salad; serve alongside the stacks.

Two tips

  • Grate the cheese or slice it thinner if you like quicker melting. Leftover stacks reheat well in the oven at a lower temp.
  • Swap the apples for another apple variety or try adding a handful of dried cranberries to the salad for a different sweetness.
