Directions
- 1. Rinse the blueberries and cucumber; pat them dry and set aside the basil and greens to dry further.
- 2. Heat a grill pan or skillet over medium-high heat and lightly oil the surface.
- 3. Dry the steak with paper towels and season both sides with salt and pepper.
- 4. Sear the steak until browned and cooked to your liking, about 2–5 minutes per side; transfer to a plate, loosely cover with foil, and let rest.
- 5. Remove basil leaves and place them in a blender. Add half the blueberries, balsamic vinegar, water, olive oil, Dijon, honey, salt, and pepper; blend on high until smooth and smooth dressing forms.
- 6. Trim and quarter the cucumber lengthwise, then slice crosswise into thin pieces; place in a medium bowl.
- 7. Roughly chop the walnuts and add them to the cucumber.
- 8. Add the mixed greens and the remaining blueberries to the bowl; toss to combine.
- 9. Slice the rested steak thinly against the grain.
- 10. To serve, divide the salad between plates, scatter steak slices on top, crumble the goat cheese over each, and drizzle with the blueberry-basil dressing.
