Ingredients

  • 1 small bunchasparagus
  • 2 clovesgarlic

  • ¾ lbstriploin (New York strip) steak

Directions

  1. Whisk cornstarch with a splash of water in a small bowl to make a slurry, then stir in soy sauce, sesame oil, and crushed red pepper; set the mixture aside.
  2. Rinse and prep the produce: trim the asparagus and cut into 2-inch pieces, slice the bell pepper into 2-inch strips, and chop the green onions.
  3. Peel and mince the ginger and garlic and place them in a small bowl.
  4. Heat a skillet over medium-high heat.
  5. Slice the steak into thin strips across the grain.
  6. Swirl some virgin coconut oil in the skillet to coat the bottom, add the steak, and cook until browned on both sides, about 1–2 minutes per side; transfer to a plate.
  7. Add a bit more oil to the skillet, then add the asparagus, bell pepper, ginger, and garlic; cook, stirring often, until the vegetables are crisp-tender and lightly browned, about 2–3 minutes.
  8. Return the beef to the skillet with the green onions and the prepared sauce; cook until the sauce thickens slightly and coats the meat and vegetables, about 1–2 minutes.
  9. Serve the stir-fry straight from the skillet or in bowls, with your preferred side if desired.
