Spicy Sesame Soba Noodles with Kale, Green Onion & Soft-Boiled Eggs

Ingredients

  • 2eggs
  • ½ small bunchgreen onions (scallions)
  • 1 bunchkale
  • 5 ozsoba (buckwheat) noodles

From the pantry: chili-garlic sauce, sesame seeds, soy sauce, tahini, toasted sesame oil

Directions

  1. Boil a small pot of water, then gently place the eggs in and simmer for 4 minutes. Transfer to ice water or rinse with cold water to cool before peeling.
  2. In a large pot, bring water to a boil while you prep the greens and noodles.
  3. Wash kale, trim stems, and slice the leaves into thin ribbons after stacking and chopping.
  4. When the water for the greens boils, add the kale and cook just until bright green and wilted, about 15 seconds; drain using a slotted spoon.
  5. Return the water to a boil and cook the soba according to package directions, roughly 5 minutes.
  6. Rinse and trim green onions, then cut them into thin rounds, setting aside part for serving.
  7. Whisk together tahini, water, soy sauce, chili-garlic sauce, and toasted sesame oil until smooth to form a sauce.
  8. Drain the noodles over the kale, then rinse under cold water and let them drain well.
  9. Toss the noodles with half of the green onions and the sauce, then fold in the kale. Quarter the eggs and arrange on top with the remaining green onions and sesame seeds to serve.

Two tips

  • Prep in advance by washing kale and green onions the night before to speed up cooking.
  • Swap in extra greens or a drizzle of sesame oil for serving if you have them on hand.
