Ingredients

  • ½ (12 oz) pkgbroccoli slaw
  • ½ small bunchcilantro
  • 1 clovegarlic
  • ½lime
  • ¼ cuppeanuts, roasted unsalted
  • 6 ozspaghetti pasta
  • limes

From the pantry: crushed red pepper, honey, natural peanut butter, rice vinegar, salt, soy sauce, toasted sesame oil

Directions

  1. Fill a medium pot with water, bring it to a boil, then salt and add the pasta. Cook until tender to your liking, about 8–10 minutes.
  2. Peel and mince the garlic. In a small bowl, whisk together garlic, a bit of water, peanut butter, rice vinegar, soy sauce, honey, sesame oil, and a pinch of crushed red pepper to form a smooth sauce.
  3. In a large bowl, toss the broccoli slaw. Wash and dry the cilantro; remove the stems and mince the leaves, then add them to the bowl with the slaw.
  4. Wedge the lime and roughly chop the peanuts to small pieces.
  5. Drain the pasta in a colander, rinse with cold water, shake off excess moisture, and add it to the broccoli slaw and cilantro.
  6. Pour the peanut sauce over the pasta and slaw and toss until everything is evenly coated.
  7. To serve, divide the salad into bowls, then garnish with peanuts and lime wedges.

Two tips

  • Prep tip: wash and chop cilantro and keep it separate from the slaw until ready to toss.
  • Serving idea: if you don’t have crushed red pepper, swap in a pinch of chili flakes, and finish with an extra squeeze of lime when serving.
