Cookware

chef's knife · colander · cutting board · garlic press (optional) · grater · measuring spoons · mixing bowls · nonstick skillet · stirring spoon · tongs · vegetable peeler · whisk or fork

Directions

  1. Wash and dry all fresh produce and set aside.
  2. Heat a skillet over medium-high heat, then swirl in a small amount of oil.
  3. Add garlic, ground turkey, and ground spices; break the turkey with a spoon and cook until browned and crumbly, 4–5 minutes.
  4. In a small bowl, whisk together minced ginger, tahini, oil, rice vinegar, water, soy sauce, and maple syrup to form a smooth sauce; set aside.
  5. Tear basil leaves from stems, roll leaves gently, and slice into ribbons; reserve a portion for garnish.
  6. In a bowl, grate the carrot and combine with the basil ribbons and broccoli slaw; toss to coat and blend.
  7. Slice cucumber into thin rounds.
  8. Halve and pit the avocado, then scoop out the flesh in thin slices from the skin.
  9. To assemble, divide the slaw mix between bowls, top with turkey, cucumber, and avocado, then sprinkle with reserved basil. Drizzle with the sesame-tahini sauce and serve.

Two tips

  • Prep the slaw and sauce up to a day ahead and refrigerate to save time at dinner.
  • Serve with extra rice vinegar for extra tang or swap in a splash of soy sauce for a soy-boosted finish.
