Ingredients

  • ½ lbground chicken
  • ½ (24 oz) jarmarinara sauce
  • ¼ cupParmesan cheese, shredded
  • ½ (10 oz) bagshredded carrots
  • 1 (8 oz) pkgsliced white mushrooms
  • 5 ozspaghetti pasta
  • ½ mediumyellow onion
  • yellow onions

Directions

  1. Boil water in a medium saucepan, add a pinch of salt, then drop in the spaghetti. Cook until al dente, about 8 to 10 minutes, then drain and set aside.
  2. Heat a nonstick skillet over medium-high heat.
  3. Dice the onion: you will use ½ of a medium yellow onion and, separately, 1 ½ medium yellow onions as noted in the ingredients.
  4. Swirl in a small amount of olive oil and coat the skillet bottom. Add the onion portions, ground chicken, mushrooms, carrots, and the listed spices. Break up the chicken with a spoon and cook until browned and crumbly, about 5 to 6 minutes.
  5. Stir in the marinara sauce and bring the mixture to a simmer over medium-high heat.
  6. Reduce the heat to medium and let the sauce simmer until the vegetables are soft, about 5 to 6 minutes more.
  7. Add the cooked pasta to the skillet, toss to coat, and remove from heat. Plate and top with shredded Parmesan.
  8. Serve with a side of crusty bread if you like and enjoy.”
