Directions
- Preheat the oven to 450°F.
- Cook the gnocchi in salted boiling water until they float, about 3 minutes; drain and set aside.
- In an ovenproof skillet, heat oil over medium-high and sauté minced garlic and shallot until fragrant, about 1 minute.
- Add spinach in batches, letting each handful wilt before adding more; remove from heat and set aside.
- In a bowl, whisk ricotta with egg and spices, then fold in the cooled spinach and half of the chopped basil.
- Layer half of the gnocchi in the skillet, spread over half of the spinach-ricotta, then top with half of the tomato sauce. Repeat with the remaining ingredients to form two layers.
- Sprinkle coarsely grated mozzarella over the top.
- Bake in the oven until the cheese is melted and the dish is heated through, about 10 minutes.
- Garnish with the remaining basil, slice, and serve.
Two tips
- Make ahead: assemble and refrigerate up to 1 day; bake just before serving.
- Swap ideas: use any remaining mozzarella for topping or pair with a simple green salad using pantry staples.
