Directions
- Bring a medium saucepan of salted water to a boil over high heat.
- Wash and dry all produce; set aside the spinach if it isn’t pre-washed.
- Once the water boils, add spinach and cook just until bright green and tender, about 15 seconds; transfer to a colander and reserve the water for later.
- Drop the soba into the boiling water and cook according to the package directions, about 5 minutes; drain in the colander and set aside.
- Puree the drained spinach in a blender, then add lime juice, nutritional yeast, soy sauce, toasted sesame oil, and garlic powder; blend until smooth, adding water a little at a time to reach a pourable consistency; set aside.
- Thinly slice the green onions crosswise. Wipe the pan clean, then heat it over medium. Add a splash of oil, the green onions, crushed red pepper, and salt; cook briefly until the onions are bright and just tender, about 30 seconds, then remove from heat.
- In a bowl, toss the drained noodles with the green sauce, adding water a little at a time if needed to coat the noodles well.
- Halve and pit the avocado, scoop out the flesh, and slice crosswise into thin pieces; season lightly with salt.

- Serving idea: top with extra scallion oil and a squeeze of lime for extra brightness.
