Directions
- Heat a nonstick skillet over medium-high heat until hot.
- Prepare the aromatics by peeling and dicing the onion and mincing the garlic.
- When the skillet is hot, add the onion, garlic, sausage, and spices; break the meat apart and cook until browned and crumbly, about 4–5 minutes.
- Rinse and dry the zucchini, trim the ends, and run a vegetable peeler down the length to form ribbons.
- Stir in the zucchini ribbons, tomato sauce, and cream; simmer, stirring occasionally, until the ribbons are tender and the sauce thickens, 3–4 minutes.
- Grate the Parmesan finely and sprinkle over the skillet once served.
