  • ½ (4 oz) pkgcrumbled blue cheese
  • 4dried apricots
  • ¼ small pkgfresh thyme
  • 2pork chops, bone-in
  • ½ small headred cabbage

From the pantry: balsamic vinegar, black pepper, extra virgin olive oil, salt

Directions

  1. Preheat the oven to 425°F and line a baking sheet with foil if you like easier cleanup.
  2. Core and quarter the red cabbage, then thinly shred it and place in a medium bowl. Toss with a little oil, balsamic, salt, and pepper.
  3. Transfer the cabbage to the baking sheet in an even layer, leaving the bowl with the leftover vinaigrette behind for later use.
  4. Halve the apricots lengthwise and add them to the bowl with the remaining oil and vinegar, letting them soak briefly.
  5. Rinse and dry the thyme; strip the leaves from the stems and discard the stems.
  6. Pat the pork chops dry, rub with olive oil, and season with salt, pepper, and thyme. Arrange on the sheet pan and roast until the pork is cooked through and the cabbage is tender, about 18–20 minutes.
  7. During the last 5 minutes of roasting, scatter the apricots and crumble the blue cheese over the cabbage, then return to the oven to finish.
