Ingredients

  • ½ (18 oz) bagbroccoli florets
  • 1orange
  • ½ (30 oz) whole chickenrotisserie chicken, white and dark meat
  • 2yellow bell peppers
  • oranges

From the pantry: black pepper, hoisin sauce, salt, sesame seeds, toasted sesame oil

Directions

  1. Preheat the oven to 450°F.
  2. Trim the peppers, slice them into ½-inch strips, and place them on a baking sheet with the broccoli. Drizzle with oil, then season with salt and pepper; toss to coat and spread in an even layer.
  3. Roast the vegetables until they begin to soften, about 10–12 minutes.
  4. In a medium bowl, juice one orange and whisk in hoisin sauce to make the glaze.
  5. Remove the chicken from the bones, shred the meat, and add it to the bowl with the sauce; toss to coat.
  6. When the veggies are soft, remove the sheet from the oven. Add the chicken and glaze to the baking sheet and mix with the vegetables, spreading in an even layer.
  7. Return the sheet to the oven and bake until the vegetables are tender and the chicken is warmed through, about 5–6 minutes.
  8. Transfer to plates or bowls and sprinkle with sesame seeds before serving.

Two tips

  • Leftovers keep well in the fridge for up to 3 days; reheat in the oven or microwave.
  • For more color and texture, swap in a bit more yellow bell pepper or add extra broccoli from the same ingredients if you have it on hand.
