- 1 ¼ lbchicken drumsticks
- 2 mediumzucchini squash

Directions
- Preheat the oven to 500°F and have a sheet pan ready.
- Pat the drumsticks dry with paper towels and place them in a medium bowl.
- Cut the zucchini into 1/2-inch rounds and add them to the bowl along with the cauliflower.
- Drizzle everything with olive oil, then season with Cajun seasoning and salt; toss to coat evenly.
- Spread the chicken and vegetables in a single layer on the sheet pan.
- Roast in the oven, flipping halfway through, until the vegetables are tender and the chicken is cooked through, about 20–25 minutes.
- Remove from the oven and divide the chicken and vegetables onto plates for serving.
Two tips
- Prep ahead by tossing the chicken and veggies with oil, Cajun seasoning, and salt up to 2 hours before cooking and keep refrigerated.
- If you want milder heat, reduce the Cajun seasoning by about one third.
