Ingredients

  • 30 mlFrench vinaigrette
  • 1 ½ cupsfrozen corn
  • 1 pintgrape tomatoes
  • ½ (12 oz) jarroasted red bell peppers
  • ¾ lbstriploin (New York strip) steak

Directions

  1. Preheat a nonstick skillet over medium-high heat.
  2. Pat the steak dry with paper towels and season both sides with salt and pepper.
  3. When the pan is hot, add a thin layer of oil and swirl to coat the bottom. Add the steak and cook to your preferred doneness, about 2–5 minutes per side. Transfer to a clean plate and let rest.
  4. In a small bowl, wash and halve the grape tomatoes lengthwise and set aside.
  5. Roughly chop the roasted peppers after draining and add them to the tomatoes in the bowl.
  6. Wipe the skillet clean with paper towels, place it back on medium heat, add more oil, and swirl to coat. Add the tomatoes, peppers, and corn with Cajun seasoning; cook, stirring frequently, until the vegetables are tender and the corn is warmed through, about 3–4 minutes.
  7. Remove the skillet from heat and stir in the French vinaigrette until the mixture is evenly coated.
  8. Thinly slice the rested steak against the grain.
  9. To serve, divide the steak and the corn sauté between plates and enjoy.

  • Prep ahead: pat the steak dry, season with salt and pepper, and refrigerate up to 2 hours before cooking.
  • Serving idea: if you don’t have grape tomatoes, use any small tomatoes you have on hand.
