- ¾ lbcod fillet
- 1 pintgrape tomatoes
- 80 mlranch dressing
- ½ (10 oz) bagshredded carrots
- ½ cupwhole wheat couscous

Directions
- Bring the broth to a boil in a small saucepan over medium-high heat. Remove from heat, stir in the couscous, dill, and salt, then cover and let sit for 10 minutes; fluff with a fork before serving.
- Set a skillet over medium-high heat to preheat.
- Pat the cod dry with paper towels and season on all sides with salt and pepper.
- When the skillet is hot, pour in a little oil and swirl to coat the bottom. Add the cod and cook about 3–4 minutes per side until golden and cooked through; transfer to a clean plate.
- Rinse and quarter the grape tomatoes and place them in a medium bowl.
- Drain the capers and roughly chop them. Add the capers to the bowl with the tomatoes, along with the shredded carrots and ranch dressing; stir to combine.
- To serve, divide the cod, the salad, and the dill-scented couscous among plates or bowls.
