Ingredients

  • 1 (5 oz) pkgbaby spinach
  • 2 clovesgarlic
  • ½ ozParmesan cheese
  • 5 ozpenne pasta
  • ⅛ cuppine nuts
  • ½ mediumred onion
  • ¼ (15 oz) pkgricotta cheese
  • red onions

Directions

  1. Bring a pot of salted water to a rolling boil and cook the penne according to the package directions, starting it when the water boils.
  2. Meanwhile, peel and mince the garlic and trim and finely dice the onion; set them aside in a small bowl.
  3. Toast the pine nuts in a dry sauté pan over medium heat, stirring often until they turn golden and fragrant, then transfer to a separate bowl.
  4. Add a little olive oil to the pan, then cook the onion until softened and lightly translucent, about 3 to 5 minutes, stirring occasionally.
  5. Add the garlic to the pan and cook for another minute until fragrant.
  6. Add the spinach to the pan along with a pinch of salt and pepper, and cook until the leaves wilt, about 1 to 2 minutes.
  7. Stir the ricotta into the pan until it’s melted and well mixed with the greens, then add about half of the Parmesan and a portion of the pasta cooking water to loosen the sauce; fold in the pasta and toss until everything is coated and creamy, 1 to 2 minutes.

Two tips

  • Prep the onion and garlic first and keep them ready in a small bowl for quick sautéing.
  • Leftovers reheat gently with a splash of the reserved pasta water and a pinch of salt.
