Ingredients

  • 1 (6 oz) canchunk light tuna in water
  • 1 (14.5 oz) candiced tomatoes
  • 2 clovesgarlic
  • ½ ozParmesan cheese
  • 6 ozpenne pasta
  • ½ mediumyellow onion

From the pantry: black pepper, crushed red pepper, extra virgin olive oil, Italian seasoning, salt

Directions

  1. Bring a pot of salted water to a boil, add the penne, and cook until al dente, about 8–10 minutes; drain.
  2. Put a medium sauté pan over medium heat and add a drizzle of olive oil.
  3. Peel and dice the onion; peel and mince the garlic.
  4. Add the onion to the pan and cook until softened, about 3–4 minutes, stirring often.
  5. Stir in the garlic and a pinch of black pepper; cook briefly until fragrant, 15–30 seconds.
  6. Pour in the diced tomatoes, then season with Italian seasoning, salt, and pepper; bring to a gentle boil and simmer until the sauce thickens slightly, about 5–6 minutes.
  7. Grate approximately 1/8 cup of Parmesan for finishing.
  8. Drain the tuna and fold it into the sauce; cook another 2–3 minutes to warm through.
  9. Add the cooked pasta to the sauce and toss well to coat.
  10. To serve, divide into bowls and sprinkle with the remaining Parmesan.
  11. Enjoy.

Two tips

  • Leftovers store in the fridge for 2–3 days; reheat gently with a splash of olive oil or water to loosen the sauce.
  • For a mild heat, sprinkle in crushed red pepper or serve with an extra pinch of pepper and Parmesan on top.
