Directions

  1. Rinse the green beans, carrot, and bell pepper, then dry them before prepping.
  2. Trim the ends of the green beans and place them in a large bowl with the sliced pepper strips; add the carrot slices.
  3. Preheat a grill pan, outdoor grill, or skillet over medium-high heat.
  4. Season the steak on both sides with salt and black pepper.
  5. Lightly oil the grill or skillet, then cook the steak until it reaches your desired doneness, about 2–5 minutes per side; transfer to a plate and loosely cover with foil.
  6. In a separate skillet, heat over medium heat and prepare the aromatics by peeling and mincing the garlic.
  7. Melt the butter in the skillet, add the minced garlic, and sauté briefly until fragrant, about 15–30 seconds.
  8. Add the prepared vegetables to the skillet and cook, stirring often, until tender-crisp, about 5–6 minutes; season with salt and pepper and toss to coat.
  9. Slice the steak and serve it alongside the buttery vegetables for a complete plate.

Two tips

  • For leftovers, store the steak and vegetables separately in the fridge and reheat gently.
  • If you want a richer flavor, swap in butter for the oil when sautéing the vegetables.
