Directions

  1. 1. Rinse the lentils in a colander and drain. Wash and dry all produce; dice the onion and carrot and place them in a bowl. Trim and dice the celery and add it to the same bowl. Peel and dice the sweet potato and zest the lime.
  2. 2. Heat a medium saucepan over medium heat and add a splash of olive oil. When hot, stir in the onion, carrot, celery, thyme, and black pepper; cook about 3–4 minutes until the vegetables soften.
  3. 3. Stir in the lentils, sweet potato, lime zest, the broth, and the coconut milk. Bring the mixture to a boil over medium-high heat.
  4. 4. Peel, core, and dice the pear; add it to the pot and continue boiling briefly.
  5. 5. Reduce the heat to a simmer and cook until the lentils and vegetables are tender, about 15 minutes.
  6. 6. Ladle the soup into bowls and serve with lime wedges on the side.

Two tips

  • Leftovers can be cooled and stored in the refrigerator for 3–4 days; reheat on the stove over gentle heat.
  • For a thinner soup, add a little extra broth or water and finish with a splash of lime to brighten the flavors.
