  • ½ small pkgfresh basil
  • 1 clovegarlic
  • 1 (4 oz) loggoat cheese
  • 4 slicesprosciutto
  • 1 (16 oz) pkgstrawberries
  • 4 sliceswhole grain bread

From the pantry: black pepper, cinnamon, ground, extra virgin olive oil, honey, rice vinegar, salt

Directions

  1. Toast the bread under a hot broiler until lightly browned, then set aside.
  2. In a small bowl, soften the goat cheese by crumbling it and mixing with minced garlic.
  3. Wash and dry the greens and strawberries; pat dry and set aside.
  4. Rinse and slice the berries, then toss them with basil ribbons, a splash of vinegar and a drizzle of oil, honey, salt, and pepper to make a light marinade.
  5. Mash the garlic-infused goat cheese until smooth and spreadable.
  6. Spread the goat cheese mixture over each toast, then broil briefly until the cheese browns slightly.
  7. Top the toasts with the marinated strawberries and torn prosciutto, and finish with arugula tossed in the reserved marinade on the side.
  8. Divide the toasts and salad between plates and serve immediately.
