Ingredients

  • 2Granny Smith apples
  • 3pork sausages
  • 2 mediumyellow potatoes

Directions

  1. Rinse and dry the apples, potatoes, and sausages.
  2. Set a skillet over medium heat to warm.
  3. Peel the potatoes, then cut them into quarters and place them in a small saucepan. Cover with water by about an inch and bring to a boil.
  4. Rub the sausages with a little olive oil and set aside.
  5. When the skillet is hot, add the sausages and cook, turning as needed, until browned and cooked through, 10 to 15 minutes. Move the sausages to a plate and cover with foil to keep warm.
  6. Core the apples, cut each into four lengthwise wedges, and set aside.
  7. When the potatoes are boiling, reduce heat to medium and simmer until tender when pierced, 8 to 12 minutes. Drain, reserving about ½ cup of the cooking liquid, and keep the potatoes warm.
  8. Add half of the reserved liquid plus butter, salt, and pepper to the potatoes; mash until smooth, thinning with more liquid if needed.
  9. Return the apples to the skillet and cook, stirring frequently, until lightly browned and softened, 4 to 6 minutes. Plate the mash, sausages, and apples for serving.

Two tips

  • Prep ahead: wash the apples and potatoes now and have them ready for cooking.
  • Serving idea: loosen the mashed potatoes with a spoonful of the reserved liquid if they seem stiff; a small drizzle of olive oil over the apples adds a finishing touch.
