Ingredients

  • 2pork sausages
  • 1 (16 oz) pkgpotato gnocchi
  • ½red bell pepper
  • ⅔ cupsauerkraut
  • 1 (8 oz) pkgsliced white mushrooms
  • ½ mediumyellow onion
  • red bell peppers
  • yellow onions

Directions

  1. Set a medium pot of water to boil, then add a pinch of salt and the gnocchi. Cook until they rise to the surface, about 3 minutes, then drain and set aside.
  2. In a bowl, combine the onion slices with chopped bell pepper and the mushrooms; toss to mix and keep ready.
  3. Slice the sausages into 1-inch rounds and set them nearby.
  4. Heat a nonstick skillet over medium-high heat and add a thin film of olive oil. Add the sausage slices and the vegetable mix, season with salt and pepper, and cook, stirring occasionally, until the peppers and onions soften and the sausage is cooked through, about 4–5 minutes.
  5. While the skillet cooks, drain the sauerkraut in a colander to remove excess liquid.
  6. Return the gnocchi to the skillet with the vegetables and add the sauerkraut. Stir to combine and cook until everything is warmed through, 1–2 minutes more.
  7. Taste and adjust seasoning if needed, then divide between plates and serve.

Two tips

  • Prep the vegetables while the gnocchi water comes to a boil to save time.
  • For a different twist, swap sauerkraut for a small amount of drained, rinsed white beans and serve with a light drizzle of olive oil.
