  • 2pork chops, bone-in

Directions

  1. 1. Preheat the oven to 450°F.
  2. 2. Trim and halve the Brussels sprouts, then toss them with the frozen butternut squash on a baking sheet. Drizzle with Italian dressing, season with garlic powder, salt, and pepper, and spread into an even layer.
  3. 3. Roast in the oven, tossing once halfway through, until the vegetables are fork-tender, about 20–25 minutes. Remove from the oven.
  4. 4. While the vegetables roast, place a skillet over medium-high heat to heat up.
  5. 5. Pat the pork chops dry and season both sides with salt and pepper.
  6. 6. When the skillet is hot, add a thin layer of olive oil and swirl to coat. Add the chops and sear until golden brown and cooked through, about 3–4 minutes per side. Transfer to a plate and loosely cover with foil.
  7. 7. Let the chops rest briefly while you finish up plating.
  8. 8. Divide the roasted vegetables among plates and top with the pork chops. Serve.
